Providing vital microbes post ferment, transforming sugars into punchy acids and funky krauts. Tender and sweet come summer hauls, leaves peeling with ease to hold up in salads, stir fries, and wraps. Inspiring cabbage-core and plant-based eaters alike. Surviving refrigerator neglect and still saving dinner in moments of need. A friend in cabbage, indeed.
I’m feeling sentimental about all things hearty greens this week as we think about the futures of food. How might access to quality produce shift in this changing timeline?
