And how to eat beet greens!

Hi friends,

A week of elevating leek greens, beet leaves, and other un-loved produce. Championing every edible ingredient over here and hoping to inspire y’all to do the same. Finding a delicious use for unexpected produce is at the top of my dopamine list. But recipe testing has its pitfalls. There is inevitable waste in trial and error and executing the best possible dish. There are mushy lentils and crumbly tahini bars (but I’m still gonna eat that) and in every imperfect bite, a lesson in iteration. How to improve, learn chemical reactions, figure out what is easily repeatable. A process I revere, though not without its frustrations.

Reframe failing in the kitchen to–finding out what doesn’t work. Let the process be focused on information gathering and come cooking with an open mind. This week I’m encouraging you to build your culinary confidence through mistakes. Make them meaningful and I promise you, those moments are what make the chef.
